Made from the second runnings of Rockyard's Three Story Plunge Tripel. Pre-boil gravity was ~ 1.050. Diluted with two gallons of water to get to 1.040. Will add sugar to primary after fermentation ramps up.

Comments

Pitched at 80 degrees F to stress out the yeast - took a full 48 hours for any sign of fermentation to show in the airlock. That sort of lag time was not intended. Pitched three vials of second-generation WLP575 absconded from the Rockyard. Apparently, it wasn't enough, even for second-generation.

Actual OG was 1.050. The 1.061 is an estimation with the two pounds of sugar added.

Added 2.5 pounds of table sugar to primary - five days in. We'll see if that will dry things out a bit... (August 27, 2010).
