Mashed 21 Lbs. grain as above into 21 L 136 F Water, 75% Distilled, 25% HR Tap. Stabilized at 125F. 100 minute rest. Added 2.5 gallons boiling water. Stabilized at 140 F. 45 minute rest. Decocted 4 gallons thick mash. Cooked 25 minutes. Added back to mash. Stabilized at 158 F for 45 minutes. Vorlauf 15 nminutes. Fly sparge to 14 gallons 1.050 wort. Add 1 oz Hallertauer Hersbruecker and start boil.
