American IPA – Extract GONE

General Info

This was the Columbus IPA recipe from MoreBeer.com. I modified this one slightly to extract more of the hop character from the existing hops and added some extra hops and malt extract to compensate for the additional water and just because I could!

Additional Ingredients:

1lb LME

.5oz Amarillo Hop pellets - first dry hop

.5oz Amarillo Hop pellets - second dry hop

Tranfered to 2nd fermentor, it already has a significant aroma and a very assertive hop bitterness, but that just won't be enough for this one! Still going to dry hop the bejesus out of this one!

Bottled, fantastic hop aroma and flavor. Malt still shows through a bit, bitterness has mellowed very nicely.

Finished conditioning, this ale has a strong hop bitterness balanced with strong citrusy pine, and resiny flavors. The malt does show through, but is something to search for. The aroma is quite potent with notes of pine, citrus and of course hops!

Procedure

This one got a bit tricky on me...

Heat 4 gallons water to 170 degrese Farenheight and steep grains for 30 minutes.

Bring to boil , remove from heat and add extra light malt extract (don't add the light malt extract, that comes later!)

Bring back to boil, add bittering hops.

At 20 minutes add whirfloc.

At 15 minutes add flavor/aroma hops

Cool wort and strain contents into fermentor.

Add water to bring to 5 gallons

Decide that there is still too much hop character left in filtered hops, boil 3 cups water and strain boiled water though hop bed in strainer into fermentor.

Realize that with the extra water you missed your target gravity, dig through fridge and find additional LME from last week's batch, boil 2 cups water and add 1 lb light LME to water. Cool to 60 degrese Fahrenheight and add to fermentor.

Oxygenate wort for 45 seconds

Pitch yeast!

Special Procedures

Rack to 2nd fermentor, leaving what ever beer cannot fit into 2nd fermentor behind, dry hop with columbus and amarillo hops. After 1 week in 2nd fermentor, dry hop with additional amarillo hops. Bottle after one more week.
