Substituted Calypso hops for Crystal.

Compared the last batch with the inspirational brew at five weeks of age. The original was "smoother" - mine had a stronger bitterness bite to it; possibly a combination of fusel alcohols and minerals in the water. Original had more hop aroma and a lighter color. Aside from these three differences, all who sampled (five people), said this was "very close" to the inspirational beer.

This time, I'm reducing the mineral additions and increasing the late hop additions.

As expected the 1272 petered out at 1.024. Added a starter's worth of WLP060 - San Diego Super Yeast to bring things down to where they're supposed to be. 

Not much luck with Wyeast 1272 finishing out - notwithstanding the generous pull I received fresh from the Dry Dock tanks. Perhaps it needs more time than I'm willing to give it, but I can't see any reason not to use WLP001 or the new WLP060. Not much difference in the flavor profile in my opinion.
